RumChata Pumpkin Pie

Ingredients


6 oz RumChata
1 (15 oz) can of pumpkin
1 cup sweetened condensed milk
2 large eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1, 9 inch unbaked pie crust

Directions


Preheat oven to 425 degrees Fahrenheit. Whisk pumpkin, sweetened condensed milk, eggs, RumChata, spices and salt in a medium bowl until smooth. Pour into crust and bake for 15 minutes. Reduce oven temperature to 350 degrees and continue baking for 35 to 40 minutes or until knife, inserted 1 inch from crust, comes out clean. Let cool. Garnish as desired.


RumChata Bananas Foster

Ingredients



5 bananas, quartered
1 tsp lemon juice
1 jar (12.25 oz) caramel ice cream topping
1/2 tsp cinnamon
3 tbs RumChata
Vanilla ice cream


Directions



In a skillet combine caramel topping, lemon juice, RumChata and cinnamon and bring to a boil, stirring often. Remove from heat and gently stir in the bananas. Spoon over ice cream!



RumChata Cheesecake

Ingredients


15 graham crackers, crushed
2 tbs butter, melted
32 oz cream cheese, softened
1 1/2 cups sugar
3/4 cup RumChata
4 eggs
1 cup sour cream
1 tbs vanilla extract
1/4 cup all-purpose flour

Directions


Preheat oven to 350 degrees Fahrenheit. Grease 9" spring form pan. In a medium bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan. In a large bowl, mix cream cheese with sugar until smooth. Slowly blend in RumChata and eggs. Mix in sour cream, vanilla, and flour until smooth. Pour filling over prepared crust. Bake for 1 hour. Turn off oven and let cake cool in oven with the door closed for 5 to 6 hours to prevent cracking. Chill in the refrigerator until serving. Top with dollops of glazed strawberries or cherry pie filling to finish, if desired.


RumChata Pudding Shots

Ingredients


1 cup RumChata
1 box of chocolate or vanilla instant pudding
1 cup milk
1 container of whipped topping

Directions


Mix pudding, milk, and RumChata until smooth. Stir in whipped topping. Put into plastic shot containers with lids and freeze.


RumChata Shooter

Ingredients



1 part RumChata
1 part butterscotch schnapps


Directions


Shake with ice and strain into a shot glass.


Sweet Potato Casserole

Ingredients


1/3 cup RumChata
4 large sweet potatoes, scrubbed
3 Tbsp unsalted butter melted, plus more for greasing pan
1 Tbsp dark brown sugar
1 tsp kosher salt
1/4 cup coarsely chopped pecans

Directions


Preheat oven to 400 degrees farenheit. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool. Turn the oven down to 350 degrees. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the melted butter, brown sugar, salt, RumChata and pepper to taste. Whisk the mixture until smooth.
With remaining butter grease an 8x8 inch casserole pan. Pour the sweet potato mixture into the pan and sprinkle the top with pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.



The Honey Badger

2 parts honey bourbon or whiskey

YumChata Sundae

Ingredients


1 oz RumChata, chilled
1 shot whipped cream vodka
1 shot Kahlua Liqueur
1 scoop eggnog ice cream
Cinnamon
Whipped Cream

Directions


Scoop the eggnog ice cream into a martini glass. Shake the RumChata, whipped cream vodka and Kahlua Liqueur and pour over the top of the ice cream. Sprinkle with cinnamon, and top with whipped cream. 1 oz RumChata
2 scoops vanilla ice cream
1 banana, sliced and placed over ice cream
Chocolate syrup or caramel syrup, or both
Almonds, cashews, or peanuts

Combine all ingredients in a bowl; drizzle one ounce of RumChata over the top.

2 oz RumChata
5 oz pkg Instant Vanilla Pudding Mix
2 c Milk
7 oz Sweetened Condensed Milk
1 tbs Vanilla Extract
12 oz Frozen Whipped Topping, thawed
16 oz Vanilla Wafers
14 Bananas, sliced

Directions


Soak vanilla wafers and bananas in RumChata for 20 seconds; pour off remaining liquid into a bowl with condensed milk, set aside. In a separate bowl, beat pudding mix with milk for 2 minutes. Blend in condensed milk mixture until smooth. Stir in vanilla extract. Fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.


Gingerbread Martini

1 part Torani gingerbread syrup (or substitute Hiram Walker Gingerbread Liqueur)
2 parts vanilla rum
1 gingerbread cookie, crumbled

Leave bread slices out in a paper bag overnight to dry out. With a fork, beat together eggs, milk, and RumChata. Heat butter in griddle over medium heat until melted. Dip bread slices into egg mixture and cook until golden brown, about 2-3 minutes per side.

RumChata Buttercream Frosting

Ingredients


1 cup unsalted butter, softened
3-4 cups confectioners sugar, sifted
1/4 teaspoon table salt
1 tablespoon vanilla extract
Up to 4 tablespoons RumChata

Directions


This recipe uses powdered sugar, butter, vanilla and RumChata.
Instructions:
1. Beat butter, softened (ideal texture should be like ice cream) for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn't blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of RumChata and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining RumChata - 1 Tablespoon at a time.

RumChata Key Lime Pie

Ingredients


5 beaten egg yolks
10 oz sweetened condensed milk
6 oz RumChata
1/2 cup Key Lime juice
1 9-ounce prepared (or homemade) Graham Cracker crust.

Directions


Preheat oven to 375 degrees Fahrenheit. In a bowl beat egg yolks and combine with sweetened condensed milk and RumChata. Gradually add Key Lime juice while continuing to mix. Pour mixture into graham cracker crust. Bake in oven for 15 minutes, remove and allow to cool. Serve cold/chilled, topped with cool whip/whipped cream and Key Lime slices if desired.

After pie has cooled, place in refrigerator until cool and cut into slices, insert 1 skewer/kabob stick into pointed end of pie (not through crust). Dip/pour melted chocolate over entirety of pie slice and place on sheet of wax paper.* Place in freezer ASAP- get in freezer as soon as possible to protect shape/integrity of the pie.
Freeze for minimum 1 hr. Enjoy. Thoroughly.

*Use melted chocolate at lowest possible temperature*


Salted Caramel Martini

Ingredients


2 parts RumChata
1 part caramel vodka
sea salt/table salt (do not use margarita salt)

Rim Martini glass with salt (use water, NOT lime juice).  Shake ingredients with ice and strain into salted martini glass.  Optional:  Drizzle a teaspoon of caramel sauce into bottom of glass.


Salted Caramel Shooter

Sea salt or table salt

Shake with ice and strain into shot glass that has been rimmed with sea salt, or lick salt off of hand like tequila shot.


Bourbon Cream

Combine over ice in rocks glass and sip and savor. If Bourbon is over 90 proof, mix at 4 parts RumChata, 1 part Bourbon.

Pour chilled Patron Cafe XO into shot glass. In a shaker, add a splash of Irish Whiskey to RumChata and shake vigorously. Layer on top of Patron Cafe XO.

RumChata Banana Ice Cream

Ingredients


1/2 Cup whole milk chilled
1/2 Cup RumChata well chilled
3/4 granulated sugar
2 Cups heavy cream
vanilla bean paste (to taste)
2 extra ripe bananas

Directions


Combine whole milk, RumChata and sugar in a mixing bowl. Mix until sugar is dissolved by whisk or hand mixer. Stir in heavy cream and flavor to taste with vanilla bean paste. Pour mixture into ice cream maker freezer bowl. Allow to churn for 20 minutes.
Peel and mash 2 extra ripe bananas into a smooth texture. Add bananas to ice cream maker after 20 minutes and allow to churn for another 10 minutes. Pour into an air tight bowl and place in freezer. Allow ice cream to set to desired hardness.

2 C granulated sugar
5 large beaten eggs
1 C milk
1 C RumChata
2 t pure vanilla extract
3 C cubed Italian bread--allow to stale overnight in a bowl
1/2 C packed light brown sugar

Directions


Preheat the oven to 350 degrees F. Grease a 13x9 pan. Mix together granulated sugar, eggs, milk and RumChata; add vanilla. Pour over cubed bread and let sit for 10 minutes. Pour bread mixture into prepared pan.
Sprinkle brown sugar over the top and bake for 35-45 minutes or until set.

RumChata Pumpkin Spice Muffins

Ingredients



1 Box of Spice Cake Mix (can also used Carrot Cake Mix)
1 15 oz can of Pumpkin
1 tsp Fresh Ground Nutmeg
1 tsp Cinnamon
1 shot glass of Rumchata
Raisins are optional

Directions


Stir all ingredients together.
Spoon into paper baking cups in a muffin tin.
Bake at 350 degrees for 20-25 mins.
