My mom made this comforting meat and cornbread dish when we were growing up. I made it for my kids and grand kids. Us big kids like it too! The sweetness of Jiffy Cornbread and touch of spiciness from the meat mixture is just the right combination. Using a wet your knife to spread the cornbread mixture will keep it from sticking. I love this comfort food from my childhood, hope you do too!
1 pound lean ground beef
1/3 cup onion, chopped
2 teaspoons chili powder
1 teaspoon Worcestershire sauce
1 box Jiffy Corn Bread Mix
salt and pepper, to taste
1 8 ounce can petite diced tomatoes
1 can kidney beans, canned, drained
Brown meat, and onion and drain off grease. Add chili powder, Worcestershire salt and pepper, tomatoes, Simmer 15 minutes. Add beans. Mix Jiffy as directed on package. Pour meat mixture into PAM sprayed casserole dish. Spread cornbread batter over with a wet knife. Bake at 425 for 20 minutes or until the cornbread is done.
