LOVE THIS PIE!! Made it yesterday for dinner when mom and my friend Mary came over! It uses cream of coconut and heavy whipping cream. We served this pie up at the restaurant. It was a holiday favorite!
Pie:
1 large graham cracker crumb pie crust
1 can cream of coconut
1/4 cup cornstarch
2 cups heavy whipping cream
3 cups coconut
Topping:
2 cups whipping cream1/2 cup powdered sugar
1 cup shredded sweetened coconut, toasted coconut
Mix the cream of coconut, cornstarch and whipping cream together in a saucepan. Cook until thick. Remove from heat and stir in coconut. Pour into pie shell. Beat whipping cream adding powder sugar after 30 seconds. Beat until thick and forms peaks. When cool top with whipped cream mixture and garnish with toasted coconut.
