Pumpkin Sheet Cake

If you are like me, I don't like to make pie crusts, and I'm not really into the store bought.  This cake takes the place of pumpkin pie and serves a crowd.  Great for potlucks too!!



4 Eggs
2 Cups Sugar
1 Cup Vegetable Oil
1 Can Pumpkin
2 Cups All Purpose Flour
2 Tsp Cinnamon
1 Tsp Baking Soda
1 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Pumpkin pie spice
1 Cup Raisins (optional)
1/2 cup walnuts chopped (optional)
Cream Cheese Frosting See in directions


Heat oven to 35o degrees.  Grease jelly roll pan, 15 1/2x10 1/2 inches.Beat eggs, sugar, oil and pumpkin in large bowl until smooth.  Stir in flour, baking soda, baking powder, cinnamon, salt, and pumpkin pie spice.  Stir in raisins.  Spread in pan. Bake 25-30 minutes or until light brown.  Cool completely in pan on wire rack.  Frost with cream Cheese Frosting: 1Pkg. 3oz cream cheese, softened 1/3 cup butter or margarine softened 1tsp vanilla2 cups of powdered sugar.1/2 cup chopped walnuts. Mix cream cheese with butter and vanilla.  Gradually beat in powdered sugar until smooth.
