Cream of Coconut Pie

LOVE THIS PIE!! Made it yesterday for dinner when mom and my friend Mary came over! It uses cream of coconut and heavy whipping cream.  We served this pie up at the restaurant.  It was a holiday favorite!


1 large graham cracker crumb pie crust
1 can cream of coconut
1/4 cup cornstarch
2 cups heavy whipping cream
3 cups coconut
Topping:
2 cups whipping cream
1/2 cup powdered sugar
1 cup shredded sweetened coconut, toasteMix the cream of coconut, cornstarch and whipping cream together in a saucepan.  Cook until thick.  Remove from heat and stir in coconut.  Pout into pie shell.  When cool cover with cool whip and garnish with toasted coconut.
