Coconut Pie



This pie is wonderful! You can find cream of coconut at walmart in the section where they stock mixers/wine. Do not confuse with coconut milk



1 Large Graham Cracker Crumb Pie Crust
1 Can Cream of Coconut
1/4 Cup Cornstarch
2 Cups Heavy Whipping Cream
3 Cups Coconut



Mix the cream of coconut, cornstarch and whipping cream together in a saucepan. Cook until thick. Remove from heat and stir in coconut. Pout into pie shell. When cool cover with cool whip and garnish with toasted coconut.



Servings: 8
Notes: Be sure and stir while cooking. It helps to use a heavy non-stick pan for this recipe.
