Apple Enchiladas


Flour tortillas filled with apple pie filling and smothered in a simple syrup are baked until sweet and golden


1 Can Apple Pie Filling
6 8 Inch Flour Tortillas
2 Teaspoons Cinnamon, separated
1/2 Cup Butter
1/2 Cup White Sugar
1/2 Cup Brown Sugar, packed

Spoon filling down the middle of each tortilla. Sprinkle all with 1 tsp of cinnamon. Roll up and place seam side down in lightly greased pan. In med. saucepan melt butter, and add sugars, water and remaining cinnamon and bring to a boil. Reduce heat and simmer for 5 minutes. Pour over filled enchiladas. Let sit for 30 minutes. Bake in preheated oven at 350 degrees for 20 minutes or until golden.

Servings: 4
Notes: Can be doubled easily. This is great served with whipped cream or ice cream!
